Ingredients
- Pink Carrots – Grated - 4 cups
- Khava – 1 ½ cup
- Nutmeg – Grated – a pinch
- Ghee – 4 tsp
- Cardamom powder – ½ tsp
- Sugar – 1 ½ to 2 cups ( depends on how sweet you may want it )
- Roasted Dry fruits/nuts – ( raisins/cashew/badam)
Procedure
- In a thick bottomed kadai, add 2 tsp of ghee and the grated carrots. Stir fry for 3-4 min on medium flame.
- Add the remaining ingredients Khova , nutmeg, cardamom powder , sugar .
- keep stirring the mixture constantly till you begin to see that it comes together. ( this needs constant stirring else the carrots wont be cooked uniformly and the base of the kadai may get burnt)
- The mixture caramelizes and the halwa tends to solidify a little. – this would probably take about 6-7 minutes on medium flame.
- add the remaining 2 tsp of ghee and roasted dryfruits/nuts and serve
all these are my personal recipes and i do stand by them. If it is similar to someone else's recipie on the web its completely unintentional
