Carrot Halwa / Gajar Ka Halwa



Ingredients
  1. Pink Carrots – Grated - 4 cups
  2. Khava – 1 ½ cup
  3. Nutmeg – Grated – a pinch
  4. Ghee – 4 tsp
  5. Cardamom powder – ½ tsp
  6. Sugar – 1 ½ to 2 cups ( depends on how sweet you may want it )
  7. Roasted Dry fruits/nuts – ( raisins/cashew/badam)
Procedure
  1. In a thick bottomed kadai, add 2 tsp of ghee and the grated carrots. Stir fry for 3-4 min on medium flame.
  2. Add the remaining ingredients Khova , nutmeg, cardamom powder , sugar .
  3. keep stirring the mixture constantly till you begin to see that it comes together. ( this needs constant stirring else the carrots wont be cooked uniformly and the base of the kadai may get burnt)
  4. The mixture caramelizes and the halwa tends to solidify a little. – this would probably take about 6-7 minutes on medium flame.
  5. add the remaining 2 tsp of ghee and roasted dryfruits/nuts and serve


all these are my personal recipes and i do stand by them. If it is similar to someone else's recipie on the web its completely unintentional
